Easy Pork Casserole

This recipe was the first place winner for the 2012 Wisconsin Pork Association's Mouthwatering Pork competition at the Wisconsin State fair. Recipe submitted by Barb Stzahler - Reedsburg, WI.
Ingredients
3 lbs Pork loin roast, cubed
½ cup cider vinegar
¼ cup brown sugar
½ cup soy sauce
1 teaspoon cornstarch
1 teaspoon minced garlic
1 teaspoon grated ginger
Directions
Brown the cubed pork on the stovetop. When the meat is browned, transfer to the crockery cooker.
In a separate bowl, whisk together the sugar, soy sauce, grated ginger, garlic, and cornstarch. Pour over the meat. Cook on low for 2 hours. This dish is best served over hot noodles or rice.
