1 Cornish Hen
1-2 tbsp. Butter
1 tbsp. Cajun Seasoning
½ cup Water
½ cup Chicken broth
Seasoned salt, to taste
1 med. Potato, sliced into large chunks
Cooking Process
Add 1-2 tbsp. butter to the cooking vessel, choose "Brown" setting and begin preheating. While preheating, rinse the hen and remove any gizzards. Rub Cajun seasoning over the hen, then sprinkle with seasoned salt.
When butter is melted and the cooking vessel is hot, brown the hen on all sides. When browned, turn the pressure cooker off, then remove the hen. Place rack into the cooking vessel, add water and broth, then place the hen on the rack. Place sliced potatoes into the cooking vessel.
Seal pressure cooker and cook at high pressure for 9-11 minutes. When done, use quick release. Check tenderness of potatoes and that the hen is cooked completely.
