Grandma Verna's Carrot Cake


1- 8 oz. package cream cheese, softened ½ cup butter, softened 2 ½ cups confectioner's sugar, sifted 1 tsp. vanilla extract


1 ½ cups all-purpose flour

1 tsp. baking soda

2 tsp. ground cinnamon

¼ tsp. salt

1/8 tsp. ground nutmeg

1/8 tsp. ground ginger

3 tbsp. honey

¾ cup white sugar

½ cup brown sugar

2 eggs

⅓ cup vegetable oil

2 tsp. vanilla extract

3 cups carrot, finely grated

½ cup canned crushed pineapple, drained

½ cup walnuts, finely chopped

½ cup raisins (optional)


In a medium bowl, cream the cream cheese and butter. Mix in the vanilla, then gradually stir in the confectioner's sugar. Store in the refrigerator after use.
