What is the capacity of my wok?
The capacity of cookware is a liquid measure which is measured to the point of overflow. Actual cooking capacity is somewhat less. When stir frying the actual cooking is done in the bottom of the wok, with each food being cooked separately. As each food is cooked it is pushed up the sides to keep warm while the rest of the food is being cooked. When all foods are cooked they are combined in the wok for keeping warm or for serving.
