Spicy Noodles and Ham

    1½ quarts water
    ½ teaspoon salt
    1 pound Chinese egg noodles
    1 teaspoon sesame oil
    3 tablespoons soy sauce
    1½ tablespoons vinegar
    1 teaspoon sugar
    ½ teaspoon hot pepper sauce
    3 tablespoons chopped green onion
    ½ chicken stock
    1 cup shredded cooked ham

  1. Bring water and salt to boil in wok at 250°F.
  2. Add noodles; boil 2 minutes, stirring constantly. Drain; rinse under cold running water to stop cooking. Drain.
  3. Pour into bowl; stir in sesame oil. Mix next 6 ingredients; pour over noodles; toss to combine.
  4. Add ham; toss. Serve cold or at room temperature.

    Makes 6 servings.
