Spicy Noodles and Ham

  • 1½ quarts water
  • ½ teaspoon salt
  • 1 pound Chinese egg noodles
  • 1 teaspoon sesame oil
  • 3 tablespoons soy sauce
  • 1½ tablespoons vinegar
  • 1 teaspoon sugar
  • ½ teaspoon hot pepper sauce
  • 3 tablespoons chopped green onion
  • ½ chicken stock
  • 1 cup shredded cooked ham
  1. Bring water and salt to boil in wok at 250. Add noodles; boil 2 minutes, stirring constantly. Drain; rinse under cold running water to stop cooking. Drain; pour into bowl; stir in sesame oil. Mix next 6 ingredients; pour over noodles; toss to combine. Add ham; toss. Serve cold or at room temperature.
    Makes 6 servings.
