Spicy Tofu

  • 3 tablespoons hot bean paste
  • 1 tablespoon dry sherry
  • 1 teaspoon sesame oil
  • 2 tablespoons peanut oil
  • 1 teaspoon salt
  • 2 onions, peeled, halved and thinly sliced
  • 1 pound tofu, cut in ½ inch cubes
  1. Mix first 3 ingredients; set aside.
  2. Heat oil in uncovered wok at 350.
  3. Add salt and onions; stir-fry 2 minutes.
  4. Add tofu; gently stir-fry 1 minute.
  5. Add bean paste mixture; stir-fry to coat. Serve immediately.
    Makes 4 servings.
