Scrambled Tofu

  • 1½ tablespoons peanut oil
  • 1 pound tofu
  • juice of ½ lemon
  • salt and freshly ground pepper to taste
  • 1 medium onion, peeled halved, and thinly sliced
  • ½ pound snow peas, ends and strings removed
  • ½ teaspoon dried thyme
  1. Heat oil in uncovered wok at 350.
  2. Add tofu; gently stir-fry 2 minutes.
  3. Add remaining ingredients, stir-fry 2 minutes. Serve immediately.
    Makes 4 servings.
