Scandinavian Rice Pudding
This is easy, but very tasty. It's also a great way to use up leftover rice.
- 4 eggs, beaten
- 1 quart milk, scalded
- 1 cup sugar
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 2/3 cup chopped dates or raisins
- 3 to 3½ cups cooker rice
- In pot, combine all ingredients. Cover and place on base.
- .Cook, at Setting # 3 ½ for 2 hours. Stir after 1 hour. Reduce to Setting # 2 to keep warm for serving or chill in refrigerator and serve cold. Serve with light cream, if desired.
- Makes 10 to 12 servings.
