Fried Walnuts

    1 cup water
    ¾ cup sugar
    1 pound walnut halves
    1 cup peanut oil

  1. Combine water and sugar in saucepan; cook 5 minutes to make syrup.
  2. Place walnuts in jar with cover; top with syrup. Cool; cover; let stand overnight; drain.
  3. Heat oil in uncovered wok at 325°.
  4. Add nuts in batches; fry 1 to 2 minutes.
  5. Remove from oil with strainer. Drain on paper towels. Serve immediately.

    Makes approx. 4 cups
