Pumpkin Waffles

    2 ⅓ cups Boxed Baking Mix
    1 ½ cup Milk
    ½ cup Canned Pumpkin
    ¼ cup Vegetable Oil
    2 tablespoons packed brown sugar
    1 teaspoon cinnamon
    2 Eggs

  1. Heat waffle maker, grease with vegetable oil or 100% oil non-stick cooking spray.
  2. In a large bowl, beat all ingredients with a whisk or hand mixer until thoroughly mixed.
  3. Pour about ½ cup of waffle batter into the preheated waffle maker and cook until steam no longer escapes and the waffle is golden brown.
