Gluten-Free Buttermilk Waffles
- 1 cup rice flour
- ½ cup potato starch or corn starch
- ¼ cup tapioca flour
- 2 teaspoon baking powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 eggs or cup egg substitute
- 1½ cups buttermilk
- ¼ cup canola oil
- ½ teaspoon vanilla
- In a large bowl mix the flours, starch, baking powder, salt, and sugar.
- In a separate bowl, beat the eggs. Add the buttermilk, oil, and vanilla to the eggs and mix well.
- Add the moist ingredients to the dry ingredients and mix until large lumps are gone.
- Pour about ¾ cup of waffle batter into the preheated waffle maker and cook until steam no longer escapes and the waffle is golden brown.
