Scrambled Tofu
- 1½ tablespoons peanut oil
- 1 pound tofu
- juice of ½ lemon
- salt and freshly ground pepper to taste
- 1 medium onion, peeled halved, and thinly sliced
- ½ pound snow peas, ends and strings removed
- ½ teaspoon dried thyme
- Heat oil in uncovered wok at 350.
- Add tofu; gently stir-fry 2 minutes.
- Add remaining ingredients, stir-fry 2 minutes. Serve immediately.
